Wildjac Natural Dry Gin Based in the Wyre Forest, to the South West of Birmingham in the UK, Wildjac strive to produce a range of sustainable and eco-friendly premium botanical spirits. To this end, they hand-craft their drinks using only 100% natural ingredients which (where possible) they source locally. For their Natural Dry Gin, Wildjac have taken inspiration from deep within their home, the Wyre Forest. Using Douglas Fir, Coriander, Liquorice, Elderberry, Chamomile, Juniper, Angelica, Lemon Balm, Fresh Orange, Fresh Lemon and Thyme they have created a gin which takes the drinker right to the heart of the forest with them. On the nose this is zesty, with lively herbaceous green notes from the juniper and douglas fir. On the palate the classic notes of a gin, juniper, can be found here and are complimented by thyme, douglas fir and lemon balm (all of which are locally foraged). These strong and big botanical flavours are perfectly complimented and rounded out by chamomile and angelica. The journey continues to the end, where refreshing orange and lemon notes greet the palate giving a beautifully clean finish. However for a more classic g&t keep with their Indian Tonic. Take a large glass filled with ice and add 50ml of the gin. Gently pour over 150 - 200ml of your chosen tonic, and stir gently. Garnish with a few fresh basil leaves.
