This is the fourth in a series of books on Advances in Prostaglandin Research published by MTP Press. From laboratory and animal studies a large number of practical applications of prostaglandins have been identified. In some areas clinical trials have also been carried out. There is usually a long time interval between identifying practical applications of new drugs and clinical trials. Most of the information on practical applications of prostaglandins is scattered in different journals. Although a number of books dealing with prostaglandin research have been published (including some on practical applications in specific areas, e.g. reproduction) there is no single volume dealing with all areas of practical applications of these substances. This book aims at filling this gap and should be of interest to clinicians as well as to medical and basic scientists in academic institutions and in the pharmaceutical industry. In some areas, exciting potential applications of prostaglandins have been identified from basic research but clinical trials have so far not been carried out. Such areas of practical applications are covered in a separate intro­ ductory chapter. All contributors to the volume are scientists and clinicians actively engaged in prostaglandin research and most are recognized authorities in specific areas. The need for rapid publication in a fast-expanding field is obvious.

There can be little doubt that ours is a society riding the crest of vast and profound social and economic change. The material conditions and social landscapes through which we experience our lives are increasingly an unchartered sea of unanticipated shift and hidden consequence and many of us have the unsettling feeling that we are out of our depth. It is natural to respond to this rapid and fundamental change with concern, particularly when many of the enduring keystones of our lives have been problematized. Family is one such keystone. Family-and its apparent decline-is a topic of great interest. The breakdown of marriage and other relationships, family roles and responsibilities, the alienation of children, the rights of grandparents, juvenile crime and drug usage, and the emotional fallout of divorce are all current and emotive issues. Few individuals remain untouched by this debate. The changes we are witnessing in relation to family are made all the more worrisome because we have a limited vocabulary for discussing and understanding profound change-a vocabulary characterized by normative framings and assumptions of deficit. It is very easy to look at the changes in ''traditional'' family structure and read ''breakdown'', ''decline'' and ''loss''. A politics of blame and rhetoric of ''reconstitution'' very quickly follows. However, given the fundamental nature of contemporary social and economic change, this is not an adequate response.

Agribusiness development has been constrained by distorted economic policies and institutional controls in the emerging market economies and in most of the developing countries. In the former Soviet Union and Eastern Europe, the agribusiness complex was dominated by state-owned enter­ prises. In many of the developing countries, economic policies discriminated against agriculture and agribusiness. The results have been obvious. Despite major technological advances, agriculture and agribusiness sectors in these economies remained inefficient. A large share of the population, particu­ larly in the rural areas, has not been able to improve household incomes and living standards. The final decade of the 20th century will certainly be recorded as one of the most dynamic in modem history. The restructuring of the former Soviet Union and Eastern Europe and market reforms in many of the developing countries are progressing at a rapid pace. Agribusiness is key to economic perfor­ mance in these areas in that agriculture is an important sector in many of these economies. Economic transition to a market economy is presenting many challenges and opportunities to accelerate the process of agribusiness development, which is so essential to alleviate rural poverty. An international symposium, organized by the International Fertilizer Development Center (IFDC), provided a unique opportunity to discuss needed policy reforms to promote efficient and competitive agribusiness develop­ ment, with a particular focus on privatization and deregulation.

The rapid growth of immunology has greatly increased our understanding of disease; this growth has also generated a subject which at times appears separated from some of the basic medical sciences. Recent studies in the areas of purine metabolism and of polymorphonuclear neutrophil phago­ cyte function have, however, linked immunology and clinical medicine with biochemistry. The precise defects of the inborn errors of metabolism have now provided good evidence for the importance of purine metabolism specifically the enzymes adenosine deaminase and nucleoside phosphorylase in lymphocyte function. In view of this and the steady advance of clinical and biochemical investigation of the polymorphonuclear neutrophil phago­ cyte, it appeared timely to review the inborn errors of immunity and phagocytosis at the fifteenth annual symposium of the Society for the Study of Inborn Errors of Metabolism at Elsinore, Denmark on September II-14th, I~77. The papers presented at that meeting form the basis of this volume which brings together contributions from immunologists, biochemists and clinicians. This interdisciplinary communication should be helpful to those concerned with immune function in their patients or in the laboratory. The book is divided into four sections, One: defects of cell-mediated immunity, Two: enzyme defects and immunodeficiency, Three: disorders of non-specific immunity and Four: screening for immunodeficiency. Section One contains two reviews, one on immunodeficiency from Robert Good''s group in New York and another on the genetics of the immune system from Arne Svejgaard of Copenhagen.

Almost two decades have passed since the first edition of Food Science was published in 1968. Previous editions have been widely circulated in the United States and abroad and have been accepted as a textbook in many colleges and universities. The book also has been translated into Japanese and Spanish. This response has encouraged me to adhere to prior objectives in preparing this fourth edition. The book continues to be aimed primarily at those with no previous instruction in food sci­ ence. Its purpose is to introduce and to survey the complex and fasci­ nating interrelationships between the properties of food materials and the changing methods of handling and manufacturing them into an al­ most unlimited number of useful products. The book especially ad­ dresses the needs for insight and appreciation of the broad scope of food science by students considering this field as a profession, as well as those by professionals in allied fields that service or interface with the food industry in ever-increasing ways. The literature of food science and food technology has rapidly ma­ tured from earlier articles to books to encyclopedias. Where technolog­ ical capabilities once were limited, rapid advances in many fields contin­ ually raise questions on the responsible management of technology and its environmental, social, and economic consequences. Changes in em­ phasis have been many. Affluent countries have become more con­ cerned with the health effects of nutrient excesses than with deficien­ cies, while hungry nations continue to suffer shortages.

The use of cultured cells in the clinical diagnosis of hereditary metabolic dis­ ease is a rapidly developing subject to which many different disciplines have brought their expertise and knowledge. A number of scientists who have in­ dividually contributed to the growth of the subject gave invited papers at the Fourteenth Symposium of the Society for the Study of Inborn Errors of Metabolism in the University of Edinburgh on 13-16th July, 1976. These papers form the basis of this monograph which brings together contributions from the basic sciences and from physicians concerned primarily with human disease. The cross-fertilization produced by this interdisciplinary communica­ tion was invaluable to those trying to understand and overcome diagnostic problems posed by hereditary metabolic disease. Cell culture methods and cell preservation techniques were described by D. G. Harnden and D. E. Pegg; Dr T. Elsdale outlined some of the factors which control in vitro cell growth and division. Cell culture methods and cryopreser­ vation techniques have allowed the wide distribution of biochemically abnor­ mal cells and their study over long periods of time. It is also evident that when a defect which produces severe metabolic disorder in man can be studied in the laboratory using isolated cell cultures a wide variety of investigative procedures can be focused on to the cellular defect without distress or discomfort to the patient or relatives.

Somatostatin was discovered in 1971, by Guillemin and his colleagues during their search for the hypothalamic growth hormone-releasing factor. A peptide was found in ovine hypothalamus which inhibited the release of growth hormone from cultured anterior pituitary cells. 1,2 Determination 3 of its amino acid sequence indicated that it was a tetradecapeptide with a molecular weight of 1639 (Figure lJ. An identical peptide was later isolated from porcine hypothalamus by Schally and his coworkers. 4 The peptide was named somatostatin in the belief that it was a hypothalamic releasing factor whose sole function was to inhibit the secretion of growth hormone. It soon became evident, however, that a peptide with identical immunologic characteristics and biologic activity was present in the D cells of pancreatic islets, in D-like cells of the gastrointestinal tract, in parafollicular cells of the thyroid gland, and in extrahypo­ thalamic neurons of both the central and peripheral nervous system in various species, including man.
